The anatomy of a superb sandwich

MANILA, Philippines — Sandwiches are usually easy to make, but that doesn’t mean they have to be boring. While having a piece of ham or cheese spread in between white bread will get you through five more hours in the office, is that what you really want to greet you every afternoon?

We asked four of Manila’s top chefs what would be the sandwich of their dreams. Distinctly different but equally unforgettable, they’re made with chorizo, pâté, cucumbers, and good ol' beef patties. Each of them elevates the sandwich into a filling meal, and will coax the gourmet out of any home or weekend cook. Start grocery shopping!

“Theo’s Burger”

A hearty burger, just the way you like it. This one is delectably topped with sharp Manchego cheese, nutty Swiss, and finished off with bacon and sautéed onions. But it’s really the basics that set it apart—freshly baked bread and a meaty burger patty.

The Bread: Brioche, ciabatta, or any freshly baked bread

The Filling:

-       Freshly ground USDA Angus Beef, seasoned with sea salt and freshly ground pepper right before grilling. Cooked to medium and left to rest.

-       A thin layer of Manchego and Swiss cheese

-       Bacon

-       Sautéed white onions

The Condiments (& Extras):

-       Garlic aioli, made from scratch

-       Freshly cut potato fries with a spritz of truffle oil, garnished with sea salt

-       A glass of ice cold beer

“The Quezon Classico”

Simple doesn’t mean boring. Here’s a 5-ingredient sandwich that consists of sriracha, pâté, arugula, and red onions, blending together tart, sweet, salty, bitter, and spicy flavors. An umami bomb if ever there was one.

The Bread: Soft white bread

The Filling:

-       Sriracha-mayo-mustard dressing (1:1:1 ratio), spread on the bread and toasted under a broiler

-       Chicken liver pâté

-       Arugula

-       Pickled red onions

-       Julienned lettuce

-       Julienned cucumber
