Sapin-sapin, avocado leche flan tortes: Sebastian’s offers ice cream cakes

Local artisanal ice cream shop Sebastian’s offers their own take on the ice cream cake – the leche flan torte, made with a cookie crust base, topped with ice cream or sorbet, and then crowned with a layer of homemade leche flan.

You can get it per slice (P145) or as a whole 9″ round cake (P1,540).

Sebastian’s Classic Leche Flan flavor is made with a butter cookie crust, a hint of orange zest, and then topped with leche flan ice cream, made from homemade leche flan blended into Sebastian’s ice cream base.

There’s also a Mango Leche Flan Torte, which uses a cashew cookie crust and mango sorbet instead, and the Avocado Leche Flan Torte with an almond nut cookie crust base. The Chocolate Leche Flan Torte features milk chocolate ice cream and a brownie walnut crust.

One of Sebastian’s newest torte flavors is the Sapin Sapin Leche Flan Torte, topping layers of langka (jackfruit), ube, and kutsinta ice cream on a crunchy latik (coconut caramel) cookie crust, finished off with a coconut cream leche flan. FYI: Only real jackfruit and ube halaya are used in the ice cream, as well as glutinous rice and pandan in the kutsinta.
